When calorie counting, I have the hardest time not snaking in the late morning or early afternoon. I need a very filling breakfast to get through that without snacking too much! One of my favorite go-to breakfasts is this skillet meal. It takes less than 15 minutes total, and it tastes great!
Wash a potato, poke it with a fork and microwave it until soft like a baked potato. I weighed my potato and it was 5.75 ounces, which is roughly 125 calories.
Once the potato is in the microwave, I throw turkey sausage links in a small skillet. I’ve always been a fan of Eckrich brand smokey links. A couple years ago, I tried their turkey variation and I seriously taste no difference in the two. The serving size in 2 links for 90 calories, but for this dish I include 3 which is about 135 calories. I like my onions well done, so I tend to throw them in the pan now too. If you just want your onions warm you would throw them in a bit later. I buy onions in bulk, dice them and freeze them. I just threw in a handful or so but I would guess it is about a cup? Roughly 32 calories.
Once the potato is done I cut it into bite-sized pieces. I use 0-calorie spray (such as Pam) in the frying pan before throwing the potatoes in so they don’t stick. I keep cooking until the sausage is slightly browned, while also tossing the potatoes so that they get slightly crisp on each side.
Once done, I pull the sausages out and cut them into bite-sized pieces, and then toss them back into the mixture. Once done I spray with 0-calorie butter spray and sprinkle with salt and pepper.
5.75 oz russet potato has about 125 calories, 3g fiber and 3g protein.
The 3 sausage links have 135 calories with about 9g protein.
The onion is about 32 calories and 1g protein.
This works out to roughly 292 calories, 13g of protein and 3g of fiber which I’m pretty happy with, especially considering how much I enjoy this meal.
